Crust-freezing before Slicing or Dicing
We understand the challenges involved in slicing meats, fish and cheeses for packaging. Air Liquide’s slicing application integrates crust freezing into existing processes to improve slicing operations. With this automatic process, customers get all the advantages of reduced loss, better yield, improved slice appearance and weight control, and – above all - significant gains in efficiency.
Air Liquide’s flexible systems, using either liquid nitrogen or liquid carbon dioxide, may be easily adapted to any production requirement for crust freezing, slicing and shingling. During the crust freezing process, the surface of the product is hardened while the core of the product maintains optimal temperatures between +2oC and +4oC.
